If you’re like me, you first moved out of your parents’ house with just enough cooking knowledge to make cereal and milk for breakfast, a PB&J for lunch, and instant ramen noodles for dinner. You may also find the idea of learning your way around the kitchen pretty intimidating. It can help to start small, and learn to use one thing at a time. This is a quick guide to using your microwave.

Do you listen to podcasts? I love them! Especially when they cover health and wellness topics. I find myself listening to podcasts in the car and in my free time, and they are great for long walks to class too! While Halloween just ended, it may not be winter holiday season yet. However, according to Starbucks, the winter holidays can never start too soon. The past week marks the release of the new Starbucks holiday cups and prompts a look back at the history of the Starbucks Holiday cups. By Lauren Incarnato, Student Nutritionist You may have become a vegetarian years ago, but that doesn't mean you're free from the occasional meat cravings. Almost every vegetarian has one dish that they had such a hard time giving up. I've also heard several people say "I could be a vegetarian if it weren't for (insert meat dish here)." A few years ago, I stopped eating meat but ultimately broke at the sight of buffalo chicken dip and from there I was back into my old ways of putting bacon on my salads and looking forward to boneless wing nights at Buffalo Wild Wings.
But what if there was a non-meat alternative that could satisfy these cravings without the guilty feeling of eating actual meat? Would you believe me? Probably not. Would you believe me more if I told you it was a fruit? Definitely not. Well believe it or not, this fruit has become a staple among the vegan and vegetarian community as an alternative in several meat dishes. It's called Jackfruit. Overnight oats can provide a boost of protein, folate, potassium, and magnesium. Plus, the pumpkin in this recipe is packed with vitamin A and vitamin K. It’s relatively inexpensive to make and it’s simple enough to make it in your dorm! Here is the recipe for Pumpkin Pie Protein Overnight Oats. Not only is pumpkin a fall favorite for Halloween decor and of course pie, but is chock-full of nutrients. Pumpkins are a squash and come with all the benefits. Vitamin E, all the B vitamins, Fiber, Potassium, and Phosphorus! Pumpkin's powerful punch also helps improve your dim-light eyesight, keep skin wrinkle free, and is a powerful force against cancer.

Winter means layering up, hiding from the cold by staying indoors, and fewer daylight hours. All of these reduce the amount of sun exposure you get, and this can put you at risk for developing a deficiency in vitamin D. We’ll look at why this is the case, and what you can do about it this Winter! |
