By: Emma Slattery, Student NutritionistWhat is it? Meatless Monday is a growing global food trend that uses one meat-free day to support a number of global causes related to meat consumption. It was started in 2003 by John's Hopkins School of Public Health but since then has blossomed into 44 different countries- and is still growing. For those of you who are more like me than our resident vegan, Elizabeth, a Meatless Monday may be a more feasible way to support animal rights or the environment than giving up meat all together.
