By Alexis Mateer, Dietetic Intern If you’re like me then you’re probably crazy about Chipotle. My favorites are their burritos and burrito bowls. In my opinion, it’s one of the top fast food chains when it comes to quality and quantity of food. However, I know it’s not the healthiest option for me, or my budget. Luckily, it can be quick and easy to throw together my own burrito bowl at home. This actually works better for my budget anyway. Ditch the lines at the Chipotle on campus and try this recipe at home instead! Bonus: it can be made in a dorm room with only a microwave! Recipe notes: This recipe calls for cooked brown rice. This comes in pouches or little microwavable cups in grocery stores. If you have access to a freezer, you could also buy precooked, frozen brown rice and heat it up in the microwave. The recipe also calls for plain Greek yogurt. This is a healthier substitution for sour cream, but either could be used. You can choose to take as many liberties with this recipe as you want; that’s the fun part! If you are not a fan a black beans, try substituting refried beans, or pinto beans. Or, if you have the means and kitchen equipment, you could certainly add some cooked shredded chicken, taco meat, or sautéed veggies. You could even skip the rice and substitute tortilla chips if you wanted nachos instead!
