Eating food and taking pictures of our food. What We Ate Wednesday lets us do both and also to share our meals- which certainly are not perfect but also fit perfectly into a healthful diet! And for anyone struggling to build a meal in the Dining Hall with anytime time - yes we do see all the orientation students piling high pizza and fries- use our meals as inspiration for your own meals! For this first post I just have a conglomerate of all the meals I've snapped a pic of. Above is what I ate yesterday for work lunch! I grabbed a salad from the salad bar with mixed greens, cheddar cheese, chick peas and raspberry vinaigrette- my favorite combo. Then I stopped by Cluckers for broccoli and Emma's for some rice and beans, chicken ragout, and cheesy potatoes! Elizabeth and I have a weakness for lunchtime potatoes. The meal was delicious and filling! Today's lunch started with a salad bar salad of romaine lettuce, spinach, chick peas, and quinoa. I like putting the bowl on my plate first because then it helps me portion out the rest of my food choices- I can always go back for more but usually find that I don't need to! Also pictured is some delightful cod, potatoes, and wayyyy in the back was some broccoli all from Emma's. Not pictured is the second plate I got after finishing this one. A second plate of just french fries from Grill Works since I wasn't quite full yet and hey, french fries are tasty! From our MyPlate Spotlight a picture perfect MyPlate featuring Grilled Chicken, Bow Tie pasta with some veggies, carrots and peppers, and a mix veggie of cauliflower and green beans and pepper. DELISH!! Also thrown on are some curly fries- did I mention my weakness for potatoes? But also this is a great example of the simplicity and feasibility of the MYPLATE! For this I just went to Emma's station in South Campus and filled half my plate with the veggies that were out, grabbed a grain (pasta is a good favorite) for a quarter and some protein! And there ya go a well balanced meal. My obsession with the MyPlate continues with a half plate of brussel sprouts, sweet potato, and broccoli! The Cluckers broccoli has become a staple as far as dining hall vegetables go, it's always steamed and just plain broccoli which I personally love. There are some people who don't like broccoli but the tiny trees are my fave! Fro grains I grabbed pepper and squash cous cous and the proteins are a mix of cod and black beans. I am a full fledged meat eater, unlike our token vegan, but even so I try to get proteins from vegetarian sources or fish whenever I can. They're still filling like a piece of chicken but can provide a wider variety of nutrients. Get out of that rut of eating grilled chicken every day! This day, however, was a particularly hungry day in March when I went back and got a second plate of desserts. A trend in my diet is my unbelievably strong love for potatoes, particularly of the fried variety. But getting a piece of cake and some fries after a meal is perfectly healthy! They were delicious and I enjoyed every bite, allowing me some soul food to fuel my soul after a nutritious meal that fueled my body.
