Danielle Ferguson, Dietetic Intern Fall is finally here! Between the leaves changing, the pumpkin pictures, the cozy weather, and all of the amazing foods that come with a season like this, what’s not to love?! As we know, pumpkin usually sits in the food spotlight this time of year, but I think it’s time to give some other seasonal fruits and veggies a little recognition. Let’s take a look at what some of these other foods are! (Bonus: eating seasonal, local foods can be more nutritious, contribute to your local economy, and help your wallet too!) Squash- There’s a large variety of squash you could try like acorn squash, butternut squash, and spaghetti squash. Each one has its own unique flavor and you could even use squash to replace noodles in pasta dishes for an extra veggie boost.
Sweet potatoes- These pack a punch of vitamin A which helps keep your eyes healthy, especially after all those late nights studying! Brussel Sprouts- A surprisingly trendy food at the moment, some people like them with bacon or fried. However, your best bet is to roast them in the oven with a drizzle of olive oil and salt. Pears- This fruit is a great source of fiber, potassium and vitamin C, which means they’ll help keep you full, boost your immune system, and keep you hydrated! And of course, apples- Apple pie, applesauce, apple cider, and more! Apples are a great addition to salads, smoothies, and even sandwiches. They provide a boost of vitamin C and fiber to keep you healthy and fueled for your busy days. There are plenty more fall fruits and veggies, and you could shop around for some at your local farmers market. Better yet, the UMD farmers market is still open for a few more weeks. Stop by and check out what local, seasonal produce they have to offer!
