By: Elizabeth Katsion, Student Nutritionist Besides the ever-popular question of "where do you get your protein?", my favorite question that I get regarding my diet is, "so, like, all you eat is lettuce?". While yes, I do, eating a plant-based diet is way more than that.
Let me take you through a day of eating with me to show you all the fun foods and dishes you can enjoy while maintaining a vegan diet.
Breakfast: Bagel topped with Peanut Butter, side of fruit (whatever they have that morning in the salad bar; usually grapes and cantelope), and a coffee. This meal provides a good source of carbs (usually try for a whole wheat bagel), the peanut butter brings in some fats and protein, and the side of fruit hit you with the micronutrients. Lunch: A big spinach salad topped with chickpeas, corn, broccoli, and topped with A LOT of sriracha with a baby roasted potato and bowl of watermelon on the side. This meal is either a lunch or dinner depending on the day, today it was a lunch because I had a longer break between classes. This meal again is packed with micronutrients with all the steamed/raw veggies and fruit, protein and fiber from the chickpeas, and carbs from the potato. I need carbs at every meal to feel full, plus potatoes are my favorite--who can resist? And sriracha because, well, its sriracha. Snack: Chocolate Protein Bar and plantain chips I eat a brand that is certified vegan called NuGo bars. I can get protein without this bar, but honestly it tastes like a Girl Scout Thin Mint cookie (which is vegan btw). Now i know what you're thinking, what are plantain chips? They are kind of like banana's cousin, they're baked like potato chips and lightly salted and they're a healthy source of fat and taste just like the junk food. Don't knock it till you try it. Dinner: Veggie Chipotle Burrito Bowl. I. Love. Chipotle. *cue the "Chipotle is my life" meme* . I get mine with brown rice (complex carbs to keep me full), black beans (vegan protein), fajitas (extra blessings to the one worker that always gives me extra), mild salsa and corn, lettuce, and GUAC (Pro Tip: it's free when included in a veggie burrito/bowl!!). I usually treat myself to Chipotle once a week, but if I was eating in the diner I would do a variation of what I had for lunch, switch up my veggies, add some rice etc. In conclusion, yes i eat lettuce it's great, but I also eat a variety of other satisfying foods. Like the grass and the flowers across campus. just kidding.
