By: Elizabeth Katsion, Student Nutritionist If you have been following this blog since the beginning, you may remember some posts entitled "Ask the Vegetarian" where I debunked many myths of a vegetarian diet. However, over the summer I made the jump to veganism. I have always loved food documentaries on Netflix, but Cowspriacy really struck a chord. This film focused on the environmental impacts of a meat-eaters diet vs a vegan diet, and it was eye-opening. A vegan saves 1,100 gallons of water, 30 sq ft of forested land, 45 pounds of grain and 20 pounds of carbon dioxide everyday. This convinced me. As a vegetarian I was still reducing my impact, but I wanted to do better. While I know the vegan diet is not for everyone, I still highly suggest the movie as it presents a lot of valuable information on the large effect our diets can have on the environment. I won't try to convince you, but its always good to keep your options open to be more informed. So from now, this re-occuring post will be "Ask the Vegan", hopefully you still enjoy! Maybe try one of the vegan meals from the vegan station this week and reduce your carbon footprint!
